Here is a not sweet molded salad for summer. It is not spicy even though there is horseradish in the salad. If you prefer more kick add more horseradish.

2 packages lemon gelatin, sugar free
2 cups boiling water
2 teaspoons plain gelatin
1/4 cup cold water
1 teaspoon salt
green food coloring to color desired
2 tablespoons cider vinegar
2 tablespoons horseradish
2 tablespoons grated onion
1 medium cucumbers, grated with skins on,
about 2 cups

Combine lemon gelatin with boiling water. Let plain gelatin stand in cold water until thick then add at once to the hot gelatin mixture. Add salt, green food coloring, and vinegar. Place in refrigerator until slightly congealed. Then fold in the onion, the grated cucumber, and horseradish. Blend thoroughly. Pour into a medium-sized, well oiled mold or bowl. Let stand in refrigerator for about 10 hours. Serves 8.
