Zucchini and Sausage in Marinara
Italian Sausage, Zucchini and Basil Marinara
INGREDIENTS: Serves: 4
1 lb crumbled SB-friendly Italian sausage (hot or mild)
2 small onions, chopped
2-3 Tbs olive oil
4 cups zucchini, chopped and deseeded
2 cloves garlic, minced
1 28 oz can tomato sauce/NS marinara
1/3 c. chopped fresh basil
PROCEDURE:
1. Saute the sausage until cooked, using olive oil as needed.
2. Remove the sausage from the pan and sauté the onions until soft.
3. Add the zucchini and cook 3-5 minutes until soft.
4. Add the marinara and simmer for 5 minutes, then add the sausage back to the pan, adding the basil.
I adapted this from a recipe I saw on TV. That chef served it over garlic toast but I just ate it plain. You could also use any whole wheat pasta or even shirataki noodles.
I also added mushrooms and red peppers with the zucchini. Delicious!!
