Default Frozen desserts and miscellaneous treats

I haven't tried these yet, but I plan on it.

Banana Berry Pops
1 c strawberries
1 medium banana
1/2 c mandarin oranges
1/4 c lowfat plain yogurt
2 tsp strawberry jam

Combine all in the blender. Pour in 8 popsicle molds.

Dreamsicles
1 1/4 c lowfat vanilla frozen yogurt
1 1/4 c orange juice
1/2 c nonfat plain yogurt

Combine ingredients in a blender and puree until smooth. Pour in 8 popsicle molds.
(55 calories, 0g fat, 11g carbs, 0g fiber, 2g protein, 11g sugar)

Tropsicles
1 medium banana
1 c mangos, chopped
1/2 c pineapple juice
1/2 c lowfat coconut milk
1 Tbls honey
1 Tbls fresh lime juice

Combine the banana, 3/4 cup of the mango, pineapple juice, coconut milk, honey and lime juice in a blender and puree until smooth. Pour mixture into the popsicle molds. Drop a few pieces the remaining mango into each mold.
(63 calories, 1g fat, 12g carbs, 1g fiber, 1g protein, 10g sugar)

Watermelon Popsicles
1 c seedless watermelon chunks
1 c orange juice
1 c water

Combine all in the blender. Pour in popsicle molds.

Let me know if anyone tries/has tried any of these.

Default Blizzard (sort of)

1/2 oz sugar free, fat free Jello Brand Instant Pudding Mix
(You can use whatever flavour you like)
1 cup skim milk
1 cup ice

Pour the skim milk into a blender, then add the Jello pudding powder. Blend until thouroughly mixed. Add the ice and blend until ice is completely crushed into the pudding mixture.

Pour into a parfait or fancy dish and top with some fresh berries or a little grated dark chocolate - enjoy!

Makes 1 serving at 3 points

Default Yogurt, Mango, Pineapple, Ginger-Mint Popsicles

I got some popsicle molds for my birthday and this is my first experiment:
1 C Nonfat Yogurt
1 6oz can Pineapple Juice
1 whole Mango (peeled and chopped)
1 1-inch knob Ginger (peeled and chopped)
3 srpigs Mint
2 tablespoons Sugar Syrup

Microwave the ginger in the juice for 2 minutes, then strain. Blend everything in a blender, then pour into molds and freeze for 4 hours.

I think I might reduce the amount of yogurt and add more juice in the future.

Default Yogurt Parfaits

INGREDIENTS:

* 1 cup sliced strawberries
* 1 large sliced banana
* 2 cups low fat vanilla or strawberry yogurt
* 2 cups low fat granola

PREPARATION:
In four glasses or goblets, alternately layer strawberries, yogurt, granola, and banana, finishing with a light sprinkling of granola on top, with a few slivers of strawberry for garnish. Chill or eat immediately.

Serves 4.

Per Serving: Calories 400, Calories from Fat 46, Total Fat 5.1g (sat 1.6g), Cholesterol 6mg, Sodium 217mg, Carbohydrate 77, Fiber 5.4g, Protein 11.4g

Default Ambrosia Salad

AMBROSIA SALAD

Ingredients:
4 ounces of sour cream
16 ounces of Cool Whip
2 cans pineapple chunks, drained
2 cans mandarin oranges, drained
2 jars maraschino cherries, drained
1 cup of coconut flakes
1/2 bag mini marshmallows


Procedure:
Combine sour cream and Cool Whip. Fold in all other ingredients. Chill covered for at least 2 hours.

Homemade ice cream for the ketogenic diet



Ingredients:
  • 1 and a half cups (375 mL) 35% whipping cream
  • 1/2 cup (125 mL) unsweetened almond milk
  • 1/2 cup (125 mL) Swerve Granulated Sweetener
  • 1 and a half teaspoon of vanilla extract
Preparation:
  1. Prepare a container that can hold about 1.5 liters of ice cream by putting it in the freezer for at least 10 minutes.
  2. In a large bowl, combine all the ingredients and whisk with your mixer until the sweetener is completely dissolved.
  3. Pour into the container. Freeze for 45 minutes until the wedges start to freeze.
  4. Scrape the corners well with a spatula and beat for 30 seconds with your mixer. Return to the freezer.
  5. Repeat every 30 minutes for about 3 hours or until the mixture is no longer runny. The mixture will become more and more firm each time.
  6. Freeze.
  7. Before serving, leave on the counter for a few minutes to soften it.
  8. Use like regular ice cream
