Default Seeking Fritatta recipe with no cheese (or flour)

Any suggestions are appreciated! Basically interested in a user-friendly way to bake eggs and veggies into some sort of casserole. Thanks!

I roast various vegetables. Coat a glass dish with coconut oil. Line the bottom with fresh spinach, add the vegetables and pour eggs just to cover. Bake at 350 for about 30 minutes or until set. I also sprinkle the top with Tony's seasonings.

I googled paleomg and frittata. In case you don't want to click the link, there are few recipes none use flour, some might have cheese.
