Default I need Lunch Ideas...

For this week. I don't want to do salads or frozen stuff. I was thinking of sandwitches because I'll eat outside this week. What do you think??

I know you don't want to do frozen stuff, but I have been taking stuffed peppers, soup, stew, chili, or quinoa balls that I cook, portion and freeze on weekends. They're frozen, but they're 100% homemade and frozen by me.

In the morning I just add my meal of choice to the snacks that I pack at night (one fruit serving, and one vegetable with dip) and I can grab and go.

Salads, wraps, tuna or chicken salad with cucumbers or tomatoes (I like it stuffed in the hollowed tomato) are great cold meals too.

Alternative salads such as tabouleh or couscous, or even pasta or potato salads can be options. There are plenty of healthy recipes for all of them online.

I recently made and enjoyed this Mediterranean Barley Salad. It can be eaten cold, but I do like it heated a little bit. I added black beans and feta cheese. Others have added chick peas or chicken for added protein. I've found barley to be incredibly filling, like holy cow I feel like my tummy will explode type filling!

I usually do the same as Munchy and make a big batch of something to eat all week or freeze.

I eat leftovers for lunch alot. If I don't have anything leftover I will usually make a plowman's lunch. Cheese, bread, pickles, and fruit.
