im a big breakfast eater, so here is my favorite healthy breakfast recipe:

on top of a whole wheat english muffin place a thin patty of chicken sausage.

on top of that add a poached egg

on top of that add spinach, bell peppers, mushrooms, and veggies of your choice ( i usually have cilantro, mushroom, peppers, spinach, and tomato)

you have to eat it with a fork, my hubby made the mistake of trying to make it a sandwich. but if you eat more in the morning then you do at night this is my personal favorite

out of curiosity i just looked up the calories for all of the ingredients in my above mentioned breakfast. and if you have both sides of the english muffin, 2 eggs, and 2 chicken sausage patties with the veggies, its only around a 550 calorie meal.

I'm an eggs and sausage in the morning kind of gal! I just love Walmart's Spicy Sausage patties!! I usually fry 2 eggs in Pam and have a sausage patty next to it and this fills me up until lunch time! Sometimes, if I don't have time to prepare this in the morning, an Atkins shake does the trick!

Also, I often prepare some tuna fish salad (tuna, hard boiled eggs, celery, mayo, diced jalapenos!!) and snack on some when I get hungry or even have it as a meal with a low-carb tortilla! Sometimes add diced tomatoes too! Yum!!!

I love eggs! I usually have a couple of egg whites and turkey bacon, or a full egg omelette with diced turkey and avocado. Depends on the day, my mood and my cooking motivation level. I also make a crustless spinach quiche on occasion, cut into individual servings and store in sandwich bags in the fridge. Great for when I am on the go and don't have much time.

I'm a fan of an egg or two, maybe with cheese, and some turkey sausage. As long as there is coffee, all the items listed above are optional
