What's for dinner?
I know not everyone is in the back to school frame of mind, but with the coming change of season I thought perhaps a dinner thread would be a good idea. It can be easy to get stuck in a rut of making the same things so maybe the old-timers can jog each others' memories and the newbies can get some ideas.
That being said:
last night was Reuben Chicken with acorn squash and broccoli
tonight is Mock Cornbread with Spicy Beef Casserole and cole slaw (I use the mix and make my own dressing)
tomorrow is looking like eggplant lasagna
What's on your menu?

Sunday night is always hot cereal. Sounds silly but early on I found that oatmeal was a real trigger for me in the morning...I would end up hungry and nibbling every time I had it for breakfast. I came up with the dinner idea and often on Sunday's we go out somewhere for brunch(we did today) and would like something lighter at dinner time.
Several months ago I switched from oats to a gluten free hot cereal
Dinner:
Ayurvedic hot cereal w/raw cashews, almond milk and a dribble of agave
WW Double Fiber toast
(I'd usually have a banana but mine aren't quite ripe)
We don't have kids so we have really different dinner choices from time to time. One thing I like about SBD has been my ability to adapt to our eating habits and schedules. We just seem to get busier and busier.
DH likes this Sunday routine, too.

Needing to use up some veggies, grilled peeled eggplant, yellow squash, red peppers and a red onion. Grilled spicy Italian sausage. Tossed veggies in Balsamic vinaigrette (Newman's own) Added the sausage and served over spaghetti squash. Yum!

Whte fish that was pan cooked with about two teaspoons of olive oil. A reduction of baslamic vinger to which capers were added. A stir fry of spinach, mushrooms and dry roasted tomatoes with a drizzle of truffle oil after everything was cooked (had this in a restaurant on holidays). Tomatoes and avocado. Dh had roasted red potatoes.

This evening's supper is going to be zucchini spaghetti with a marinara of plum tomatoes, baby bellas, red bell peppers, onions & lots of garlic. And it all will be fresh-picked from our garden except for the mushrooms!

I have a small steak to grill and will have with sweet potato fries and some lovely green beans from the farm. Maybe a peach for dessert?

How do you make your zucchini spaghetti?
Turkey meatloaf, eh? I was just thinking the other day that I had not made turkey burgers for ages...

Stir-fried chicken and veggies for DH and DD1.
DD2 and I are headed out for Mexican - her choice to celebrate getting through a week of school. DH is avoiding it as he says he cannot possibly go without being off plan. I will have NO chips, fajita chicken with extra veggies and no wraps, small serving of "too much fat" refried beans, and salsa.
