Default Pepperoni spinach quiche recipe question

Once upon a time, one of my mother's co-workers would make this and bring it to her work. And I would be able to partake of its goodness, because I had to pick my mother up at the end of the day! This is something that I would like to make (which is funny because I HATE spinach), but I am wondering if I could use beaten egg whites instead of full eggs? I can't comment on the website because none of the options are valid for me (someone in this day and age who doesn't facebook, I know!). I know already there are other things I could do to cut down on the fat, but I just don't like the taste of full eggs anymore.

I really think you could get away with using all egg whites. About 10 eggs with the yolk removed should be about equal to the 5 whole eggs they are asking for.
