Hi,

I make chicken or turkey burgers all the time. Never use breadcrumbs.
I add the seasoning of our choice (we love the spicy montreal seasoning, quite a zip) and combine into the meat.
Make the patties and grill, I do keep them in the fridge till before I grill them though, cuz they can get softer than a normal beef burger and harder to handle.
Good luck!

D

You can use a couple egg whites to help hold things together.

I usually use one egg, and keep it in the fridge until you're ready to grill it. I haven't ever used bread crumbs, but I'm think crushed up IP southwest cheese curls would be good in it. You wouldn't have to use much. I've done that for meatloaf before and it works well.
