My clinic has told me that cucumber & celery are considered unlimited vegetables. I have these along with lettuce in the afternoon if I'm really hungry..

Some clinics do say this but it is an individual coach tweak. Even the newest P1 sheet still has them listed under select veggies.

I'm addicted to cauliflower, too!!!!! steamed with salt and lots of pepper and olive oil. Can't get enough of it. I sometimes really get hungry too. I eat more salad if needed. Just the lettuce. big fat bowl of it. With salt and pepper and many brands of WF dressing to choose from. Just cant get enough of those veggies!

Yup, veggies are so good!

Every night I roast a cookie sheet full of veggies, drizzled with olive oil, salt and pepper. My favorite is sliced rutabaga. I add cauliflower, broccoli, red and green peppers, zucchini, green cabbage or whatever else I happen to have. Cook at 385 for 15 minutes, turn over and put more salt and pepper. Cook another 10 minutes. It's soooo yummy! Takes just a couple of minutes to prepare and then 25 to cook.in my mind, nothing beats roasted veggies!
