Want MORE Veggies!
call me crazy or just a pig but boy I wish I could have MORE than two cups of veggies most days. I have always loved my veggies but now I am addicted to them! And some shrink up so much when you cook them. Ate two cups of roasted cauliflower for lunch and could have ate that same amount again!
Anybody else feel like this?

ME! OH MY...yes...love veggies. I am in love with roasted cauliflower. And sauteed greens. And broccoli. And roasted peppers. And all the others. I have to measure and put any leftovers away or else I will keep nibbling.

Just want to clarify for original poster - you have to have two cups for BOTH lunch and dinner and lettuce doesn't count towards that. I couldn't tell from your wording but it seemed like you might have been referencing two cups per day.

PS- I too sometimes wish I could have more two, but overall I usually find the 4 cups enough.

I hope you do know it's 4 cups of veggies a day, not 2.
What I do is make a BIG salad for lunch using romaine, and add on about a cup of "real" veggies to it like peppers, cucumber, onion, etc. (I love salad) Then I can have 3 cups of veggies with dinner or spread it out for my evening snack.

Tonites dinner:
Roast beef from the crockpot, stir fried veggies (celery, leeks, bell peppers, broccoli slaw, bean sprouts, mushrooms) all over 3-4 c chopped romaine
The bed of lettuce makes me feel like I AM having more veggies.

If we had all 4 c at one meal, that is more carbs at once, increasing insulin, which we are trying to control.

I totally agree!!! Can't wait for P4 so I can have more.
I do have romaine with lunch and dinner as well. Just love the veggies.

I was able to enjoy 1 week of phase 3 in March when I was breaking a plateau. I am a big fan of LizRR's phase 3 breakfast recipes. I loved the cheesecake, bread pudding and baked French toast.

I love my veggies too. Used to always have a green smoothie for breakfast. I really miss that.
