This wasn't an ideal day, as I've been having gallbladder-iindigestion and have been eating very lightly, but I went for a drive today and had an incredible panini sandwich (just ate one slice of the bread). It was a light hummus spread, then vegetables: portabellas, yellow squash, zucchini, 2 strips of red pepper, 2 of green pepper, then what looked to be the equivalent of a thin slice of mozarella on top, melted of course. It was big, so I ate half at lunch and took the other half home for dinner. (Breakfast was yogurt.)
