Default Favorite Fall/Winter Low Calorie Recipe

I am looking for new ideas for low calorie soups, stews, and casseroles for the cool fall/winter months.

Everyone please share!

Cabbage Patch Stew

2 pounds lean ground beef (90% lean)
1 cup chopped onion
1 large head of cabbage chopped
2 large cans diced tomatoes, undrained
2 cans kidney beans, undrained
1/2 cup ketchup
Salt and Pepper to Taste

In a large soup pot, cook the beef and onions over medium heat until meat is no longer pink; drain.

Stir in the cabbage, diced tomatoes, beans, ketchup, salt, pepper and enough water to cover ingredients. Cover and cook on low for 6-8 hours or until cabbage is tender.

The Jennie-O website has tons of delicious recipes for ground turkey, but this turkey chili recipe is one of my favorites! As quick and easy as the title says haha.

I just made a double-batch of this last week and it's surprisingly delicious! I never would have thought to put apples in soup. It's also super easy - there aren't many ingredients and I think it only took me about 10 minutes to prep (depends how long it takes to peel carrots, really... I'm slow).

SMALLSTEPS ~ here's my own favorite version of Hamburger Stew ...


* MY HAMBURGER STEW *

1 lb lean hamburger
1 medium onion chopped
1 cup mushrooms, sliced
1 cup kniblet frozen corn
1 cup shredded cabbage, opt
1-28 oz can tomatoes, chopped
1 tbl onion soup mix
1 tsp black pepper
1 tsp garlic powder

Brown meat; and drain fat. Add onions, seasonings, veggies and stew for 30+ minutes until veggies are tender. Enjoy!

BTW ~ you can eat this alone, or over rice or pasta, if desired.
