Default Summer squash

Does anyone know why zucchini is allowed but not yellow summer squashes? They seem very similar in nutritional info.

The squash that is not allowed is the hard winter type squashes, like pumpkins, Hubbard, Butternut, Acorn, because they are pretty high in sugar (and therefore carb) count.

I planted zucchini, yellow summer squash, and pan squash ... I was excited to be able to eat out of my own garden. However, my coach said I was ONLY allowed the zucchini ... I knew we couldn't do winter squash, but thought the summer would be OK ... since I was told, "NO!" I will be freezing most of mine until I phase off.

If anyone finds that we really CAN eat yellow summer and patty pan PLEASE share ... I LOVE my summer squash - and it's an easy way to get in my veggies CHEAP :O))

My coach wrote on my Phase 1 sheet that yellow squash IS allowed, so I'm going with that!!

YIPPIE!!! Now, does anyone know about the vegan cheese that is made with soy?? I saw it in the store .. is it a veggie, or is it cheese?? Saw a great recipe for summer casserole topped with ridges instead of bread crumbs ... want to try it if we can use the vegan cheese in Phase I :O))
