Speaking from the perspective of someone who's lost all their weight by calorie counting--it's individual. I think it's fine to go under sometimes. If you're not hungry, you shouldn't eat. That being said, if you'd rather keep your calorie count more stable, or it's happening too frequently, then it's easy to get those extra calories without bulk, by using things like a tbsp or two of peanut butter or olive oil.
