Default Chicken Chili

1 TBSP olive oil
1 large white onion, chopped
1 green pepper, chopped
1 red pepper, chopped

Heat oil in large pot, add the onion and peppers and saute.

1 can crushed tomatoes
1 can diced tomatoes
1 can canneloni beans
1 can tomato paste
1 envelope Chili powder mix
about 4 cups cubed cooked chicken breast (what I had on hand)

combine all, simmer. It was good last night, but even better today after sitting and mellowing!

Sounds yum.

Make sure your chili mix doesn't contain no-nos (like sugar, lots of salt and added yuckies). I always make my own mix (chili powder, onion powder, cumin, cayenne & garlic powder).

LOL not an airhead at all. I remember I used a chili or a taco seasoning in Ph 1 and started craving (corn starch? Frikkin' anything corn does it to me!) and I believe Cyndi pointed it out to me. Just paying it forward!
