First tip: Don't vacuum seal bread
I bought a Food Saver about 15 years. One of the first things I tried to do was a croissant and it immediately turned into a coaster
But you can seal hard items such as crackers and cookies. I've read that they will stay good for about 6 weeks, but I don't have personal experience.
If you mix meat and veggies, make sure they are portioned to cook in the same amount of time. Otherwise you might have raw meat and mushy veggies. I personally would freeze the veggie packets separately from the chicken if it were me.
It's great for buying bulk blocks of cheese (etc) and sealing more reasonable sizes. I use mine for freezing things that I don't want to get freezer burned.
You can seal things to send to your husband, but you would need to stick to shelf stable items such as trail mix or hard cookies. It's a great idea!
