Default MMMM - Rhubarb Crumble Pic

Just thought I would share the Rhubarb Crumble Pic... Sorry I couldn't figure out how to put the picture in the recipe thread

4 cups chopped rhubarb
Sprinkle with 1 package stevia
Sprinkle with cinnamon
Add 1 TBSP walden farms strawberry spread

Mix above ingredients together in a small casserole dish

Take 1 tsp hard butter, and add to one package IP Maple Oatmeal.
Crumble with a fork
Sprinkle overtop of rhubarb mixture

Bake in oven @ 375 for 40 minutes

This looks delicious!
I'm going to have to try it next week when I get the oatmeal packet.

I have to confess prior to starting this diet I had never heard of rhubarb

One question, since this is 4 cups of veggies, do you eat it all in one day as your veggies for that day, or can you eat 1/2 one day and 1/2 the following day? Which, I know would mean you would be short half a packet (that you can probably make up for in another way). But yeah, is it ok to keep half in the fridge and eat it the following day?

That reminded me, I posted the recipe with pictures up on my blog in may of 2010

I used a tsp of butter... You could try without but I didn't have the same success with butter spray or no butter.
I don't use dairy and I made it for a dinner party.
I had approx 1/4 of a serving so I was willing to have the additional 10 calories that it amounted to
