Default My pudding muffins came out much better tonight

So this time I beat the eggs whites longer and folded in the blueberry pudding mix very gently and cooked them for 20 minutes. They came out much better and were really good. Definitely my favorite.

I just tried this! This is real cake consistency!!! I wonder if it's just the blueberry mix.. I'll have to try another one tomorrow.

Look back a few pages..there is a post called Pudding Muffins or cakes. I amke these all of the time. I am doing this from memory and will look for the actual recipe.. 2 eggs whites, 2 oz h20, and 1 tsp vanilla. Put in blender until frothy. Fold in pudding mix. Put into muffin containers..Pam sprayed. ..around 3..
Bake at 350 for 15-20 min.
I actually use only 1 liquid egg white..ie 3 tablespoons of whites..They come out a little bit flatter..
These are wonderful for travel. Just took some yesterday on my trip. Having fun with extracts..rum with chocolate pudding..almond with butterscotch.
