Default Vacation meal ideas . . .

So - I am off to the beach for vacation with MIL, DH, DD1 and DD2, plus various friends of theirs for two weeks. I usually do a lot of the cooking to avoid too much off plan food. I was hoping to use all of you for great ideas -
Here are my thoughts so far:

chicken cacciatore (noodles for kids/other grown-ups, extra veggies for me)
grilled steak kabobs w/onions, mushrooms, peppers
grilled chicken kabobs w/onions, mushrooms, peppers
burgers/turkey dogs on the grill
chili

I am sure they will get pizza at least twice, so I plan to take my little ww pitas and make homemade for me.

Garlic and Soy Grilled Pork Chops

Serves 2

Ingredients
Grill up chunks of fresh vegetables alongside these lip-smacking pork chops for an irresistible outdoor feast. Bell pepper, sweet onion, and zucchini would work quite nicely.

2 boneless center-cut pork loin chops, trimmed of all visible fat
1/2 tablespoon light soy sauce
1 teaspoons minced garlic
1/4 teaspoon paprika
1/4 teaspoon salt
1/8 teaspoon ground black pepper
Fresh herbs, for garnish

Instructions
Sprinkle the pork chops all over with soy sauce, garlic, paprika, salt, and pepper. Cover and refrigerate at least 20 minutes or up to 2 hours.

Coat a grill rack or broiler-pan rack with cooking spray. Preheat the grill or broiler.

Cook the pork chops 4" from the heat, turning once halfway through cooking time, for 10 to 12 minutes, or until a thermometer inserted in the center of a chop registers 155°F and the juices run clear. Garnish with the herbs.

Parmesan Crusted Pork Chops
Pork chops with a flavorful parmesan coating.
Ingredients

3/4 cup parmesan cheese, grated
1/4 tsp leaves dried basil
1/4 tsp garlic powder
1/4 tsp leaves dried oregano
1 dash black pepper
1/4 tsp leaves thyme
1/4 cup dijon mustard
2 tbsps olive oil
2 lbs pork chops (top loin, lean, boneless)

Directions

Preheat oven to 400 °F (200 °C).
Line baking sheet with parchment or wax paper and set aside.
In a small bowl whisk together mustard, oil, and spices.
Season the 4 pork chops with pepper, then brush both sides of the chops with the mustard mixture.
Press the grated parmesan cheese into both sides of the chops.
Place the chops on the prepared baking sheet. Bake for about 15 to 20 minutes. The coating should be browned and slightly crispy and the pork should be cooked all the way through.
Note: you can also use this recipe with boneless chicken breasts instead of pork chops & it is just as dee-lish!
