Default ziti with broccoli in garlic sauce recipe from Sherry

Ziti with broccoli in garlic sauce-from Vegetarian Express Cookbook by Nava Atlas

10 to 12 ounces penne or ziti
1/3 cup low fat milk or soy milk
4 cups of broccoli florets
1/4 cup olive oil
4 large cloves of minced garlic
1/3 cup grated parmesan cheese (I use lowfat) or soy parmesan
salt and ground pepper to taste

Bring a large pot of water to boiling and cook pasta until al dente. When pasta is done, drain it, return to the pot, and toss with milk or soy milk. Remove from heat, and cover

Steam broccoli florets in steamer basket above about one inch of boiling water for about five minutes, until they are bright green

heat oil in a small skillet. Add garlic and saute over LOW heat (be careful not to burn) for one minute, then mash garlic into the oil with fork, and saute on very low heat for two more minutes.

Add steamed brocoli and garlic mixture to pasta in the pot. Add the parmesan cheese, and season to taste with salt and pepper.

Calories-217
Total fat 11 grams-probably lower with lower fat cheese
Cholesterol- 5 grams
Carbohydrates-19 grams

This sounds really good! Would you happen to know the dietary fiber content?

I'll have to get the cookbook back out to see how many servings...I think it was four or six?? I'll post that tomorrow. Unfortunately the recipe did not list the fiber content.

Enjoy! Posting this one reminded me I haven't made it in a while.
