I really loved Crescent Dragonwagon's Passionate Vegetarian, it had a ton of recipes and was pretty interesting and fun to read.

I'm new to the forum so I don't know how much this has already been discussed but I love Marc Bittman's "Food Matters" and just got the "Food Matters" cookbook (some recipes are repeated in both books though). I also love the Moosewood Cookbooks (from my teenage vegetarian days). If you can find it, some of my favourite recipes of all times come from Mollie Katzen's "Still Life with Menu" cookbook (circa 1994).
