Default Hot chocolate mix

With the revised food list including non fat and low fat milk for all phases, I mixed up a hot chocolate mix that I keep at work, for the days that I want a little something sweet (I'm not a coffee drinker). I noticed that the s/f chocolate mixes had modified food starch so I wanted to avoid them. The ingredients below don't.

I'm going under the assumption that this is suitable for Phase I. I'm 4 days in and 4 pounds down. Yay!

1 cup carnation nonfat powdered milk
3 TB dutch processed cocoa (I use penzeys - www.penzeys.com)
2-3 TB your favorite pourable sugar substitute (I used Equal)

Mix all ingredients together in an airtight container and shake vigorously to combine. Add 2 TB to a mug and fill with hot water. Enjoy!

I made this awhile back and the flavor is pretty good BUT...the cocoa doesn't dissolve very well when I had hot water. I've tried several ways, add a little bit of water and stir the dickens out of it, then add more water; place it in a jar with hot water and shake the dickens out of it.

I would say about half to 2/3 of the cocoa dissolves and the other is pretty nasty if you get it in your mouth. I used the dutch cocoa form Trader Joes.

Any hints, should I run it through the flour sifter or something?

I'm wanting to make some of this to give as gifts for Christmas, but not until I get the undisolved problem taken care of.

I use my Keurig machine with the insert that you normally put your own coffee in, it comes out perfectly that way
