Default Oatmeal Banana Pancakes! (only about 250cals)

I found this recipe on youtube and thought I would share!
  • 1/4 cup Quick Oats Dry
  • 1/4 cup Egg white (I just use 2 eggs worth)
  • 1/2 tsp Baking Powder
  • 1/2 tsp Vanilla Extract
  • 1 cup Mashed Banana
  • 1 tsp Ground Cinnamon
  1. In a small bowl mix: Oats, Egg Whites, Baking Powder, Vanilla Extract, 1/2 cup of Mashed Banana & Ground Cinnamon.
  2. Let mixture set to thicken for 1-2 mins.
  3. Preheat pan/skillet-Medium Heat. Spray with non-stick cooking spray.
  4. Pour mixture into pan/skillet. Form into a "pancake" shaped disk with spoon. (Aprox. 1/3" thick). Let cook.
  5. When pancake can move freely when pan is shaken its ready to flip. Flip and let cook.
  6. Once your pancake is cooked, place on plate and top with the remaining 1/2 cup of Mashed Banana.

***These are SO good! It makes 1 pancake, but its pretty big and super filling. A great healthy alternative to normal pancakes that are packed with fats, bad carbs, and sugars.
***You can make this with anything you want, you don't have to use Banana!

I've done something very similar before, but instead of the banana used 1/4 cup canned pumpkin. It's great! Now I need to try it with banana . . .

So rolled oats worked just fine. Instead of adding the 1/2 c mashed banana on top, I just added a few chocolate chips to the pancake while it was cooking. I loved it! Pumpkin would be amazing too... I just hate opening a can if I don't have plans for the entire can haha.

What is consistency of the pancakes...dry? mushy? I've been trying to make a good sweet potato pancake recipe forever and it's come out...very doughy and mushy (GROSS!!! ) I like dry/fluffy pancakes.

Thanks for any help you can offer...I'd really like to try them if there not mushy..lol.
