I'm getting back on track here so tonight it's a phase 1 dinner, What a Dal and eggplant spinach curry
Coincidental timing - my formerly picky son came home from college suggesting we try to make dal! He often eats with a group that includes a vegetarian and had a recipe to share. On tap for later this week. I've never tried it before.
I'm making a dish tonight with leftover steak; found the recipe online. Simmers for a couple of hours. Tomorrow night is soup with the ham bone and beans.
I miss this thread, some of my best ideas come from here.
Tonight I made Moroccan Lentil and Chickpea Soup in the crockpot. It was really good and really spicy (2T of the harissa might have been a bit much ) When my head isn't so funky I'll post the recipe. Our crockpot section has been quiet for awhile.
Cyndi - do you know you can freeze those bags of greens from TJ's? Unless you were serving them raw in a salad they cook up just the same from frozen as they do from fresh. I love to stock my freezer with them so I always have a good veggie on hand.
Also - have you tried the new TJ's roasted seaweed snacks? (sorry to hijack this thread). They are .99 per package which it says contains 2 servings, I just eat the whole thing. Only 1 point! Satisfies a salty craving too.
I'll have to loook for the TJ seeweed next time I'm by there. Haven't tried it yet but do like their lightly salted crunchy green beans as an occasional snack.
We're having a lightened version of chicken marsala. I've been craving comfort food lately and this should hit the spot. i've made it before per the recipe and think i will replace the white flour with all whole wheat flour this time. it's so tasty!
I found a new ww pizza dough at our grocery store this week. We aren't into home made pizza, but it makes really good breadsticks. I experimented on Sunday (sprayed them with a little olive oil Pam and sprinkled Mrs. Dash and Parmesan cheese on them before baking) and Fergie's been talking about them ever since.
I sure hope Hannaford keeps carrying this dough, I'd never heard of the brand before. I can live without bread, but when I fix it/serve it I like being able to have a little if I want it. I drool through the whole meal when I fix him Pillsbury crescent rolls......
I am making the Black Bean and Sweet Potato Soup with Lime thanks to Cottage's recommendation. It's cooking right now and smells amazing. We will have sauteed mustard greens on the side
It's definitely soup weather. Tonight I'm making one of my favorite cold weather comfort soups, the Broccoli, white bean & cheddar soup. The beans give it the body of a cream soup with extra added fiber and nutrients. Yum
