Default Breakfast Quiche

2 cups Eggbeaters
1/2 cup Lowfat Cottage Cheese
1/2 cup 2% shredded cheddar cheese
1/4 cup chopped onions
1 cup broccoli florets
1 tsp canola or olive oil
1/8 tsp ground black pepper

Start with a pan on med high heat then add the oil then the onions tenderize for about 5 min then add the broccoli heat for 5 min mixing well with the onions. Then spoon into a sprayed glass pie pan then mix the rest of the ingredients together and pour over broccoli (I use enough broccoli to cover the bottom of the pie pan). Then bake at 350 for 45-50 min.

Serves four.


This is great for breakfast on the go I can make these on sunday and have for breakfast every day until the end of the week. I vary this up and add turkey sausage or lean ham Enjoy!

That sounds YUM! Thanks for posting it.

I made a quiche just yesterday that was similar--I didn't think to use the cottage cheese though--great idea.

I also found a great egg recipe for Spinach frittata on the Egg Beaters website. Super yum and 90 calories!!!!

Hey all!

I made some small edits:

4 medium eggs
1/2 cup Lowfat Cottage Cheese
1/4 cup 2% shredded cheddar cheese
1/4 cup lowfat mozzerella
1/2 cup chopped onions
1 cup broccoli florets
1 tsp canola or olive oil
1/8 tsp ground black pepper
2 strips of turkey bacon

I followed all the same directions, but layered the turkey bacon on the top before I put it in the oven. I would probably crisp the bacon a bit first next time, but other than that it was delicious with a glass of V8.

I still make Dr. A's veggie quiche cups to go so this will be a nice change. I think I will add some mushrooms as well. Can't wait to try it!
