What can I make with chicken so it doesn't feel like chicken?
I have been eating chicken breast for waaaaaay too long. Not been able to get food choices because of the snow and everything, so I've had chicken breast every night forever. I'm really, really tired of chicken breast but I don't have anything else and the chicken will go bad if I don't eat it today.
What can I make it into so it won't be remotely anything like chicken? So far I've had it as a chicken breast steak, chicken cubes on skewers, ginger chicken, chicken curry, Karahi chicken (a chili and mint sauce) and a chicken pasta bake.
I really, really do not want chicken tonight - how can I make it nothing like chicken?

I cook it and put it through the food processor with spices and hot sauce...then make some taquitos with a bit of cheese wrapped in tortillas.
Or lettuce wraps are good too...a little asian flavors and stuff it in lettuce cups.

Also, when you aren't snowed in...bison is as lean as chicken and tastes like beef....try it sometime! It is saving my diet!

i make chicken chili a lot, doesn't taste anything like chicken + it gets rid of the stringy texture so you can pretend it's anything else.
Just chop the chicken really small, add whatever you'd add to a chili, I like black beans, zucchini, corn and sweet peppers and tomatoes, but you can get creative.
Cubes of chicken can be turned into ANYTHING, you just need some extra sauce or spices. Ginger chicken, curry chicken, honey-garlic chicken, lemon chicken, pulled chicken sandwiches, chicken tacos, chicken everything! I mostly eat chicken because unlike red meat it doesn't bleed when I put it in the pan, so I make pretty much anything with it and it's always great.
Chicken doesn't have to be a broiled breast served on a bed of rice with greens on the side. Make it fun!

Ditto on what Razorback said! I boil the heck out of chicken, shred it and add salsa and a little cheese, then heat it again until it's all melted. It's really good over a salad or just by itself.

What's a taquito?
I've never seen bison here, certainly I'd expect to find it in a specialist butcher shop that involves a special journey and a frightening price. I tend to use soya mince if I want something beefy, or just beef in smaller portions.
The problem is with the portions they sell everything in, it's bad enough you have to buy a pack of 4 chicken breasts or 4 steaks or whatever but by the time I've got them home and cut them into proper portions I normally find I've got 8-10 of them. If I want to buy chicken then I have to get it in a 23oz pack - makes for a lot of everything each time.

Here is a recipe I made while doing low fat and low calorie my family all loves it. I hope you can all use and enjoy it.
Chicken Sausage
1 lb. ground chicken
2 green onions, finely sliced
1 egg white, slightly beaten
2 t. poultry seasoning
1 t. ground sage
1 t. ground fennel seed
1 t. garlic powder
1 t. onion powder
1 t. paprika
1 t. salt and pepper
Preheat large non-stick skillet on low-medium heat.
Mix ground chicken, green onion, egg white, and seasonings together. Form into four equal 4oz. patties. Lightly mist skillet with olive oil pan spray and gently place patties inside. Turning once, half way through cooking. Cook until lightly browned on both sides and until no longer pink.
Serve in a lettuce wrap, or in stuffed zucchini, peppers, or tomatoes.
Cal.135 per 4oz serving
Sausage Zucchini Boats
2 med. zucchini
1 (14oz.) can diced tomatoes
1 t. Italian seasoning
1 recipe Chicken Sausage
Salt and pepper
Preheat oven to 450
Prepare sausage recipe from previous page. Lightly mist a large non-stick skillet with olive oil pan spray and heat over medium-high heat. Crumble chicken mixture into preheated skillet instead of forming into patties. Cook and stir sausage until browned and no longer pink. Stir in tomatoes, Italian seasoning, and heat through. Remove from heat and set aside.
Cut ends from each zucchini and discard. Cut zucchini in half, lengthwise. With a 1 inch melon baller or measuring spoon, carefully scoop out center seeded area of each zucchini half, forming a boat. Lightly mist a baking sheet with olive oil pan spray and place each zucchini boat on baking sheet. Sprinkle zucchini with salt and pepper. Divide sausage mixture evenly into the center of each boat. Cook for 20-25 minutes until zucchini is tender.
Makes 4 servings
Calories: 188 per serving Fat: 3g.
For those who need to bump up the calories, I add mozzarella or pepper jack cheese at the last 5 min. of bake time.

Sometimes I take the cooked chicken and cut up & add mayo/onion and
make it like you would a tuna salad sandwich but with chicken. Very tasty.

maybe chicken burgers? my first thought was curry. curry makes anything taste good! veggies my kids hate, lentils or beans they despise...lol. but you said you are tired of that too. chicken spagetti? i never use beef anymore, so i do that.
my fav. easy no thought required is garlic chicken. i just put frozen chicken on the pan on tinfoil. spoon some garlic on it, roasted in the bulb garlic would also work. just cover in tinfoil. just bake it. i used to always use olive oil too, but i think it tastes good without.
then i put tomato sauce on it, or seasonings, or other sauce.
i really touching anything meat raw so i don't even cut it up.
sometimes you can use flavors to makec it taste like something else, like worchestoshire sauce or beef broth. not sure if you have that in uk? it's kinda like soy sauce, but has other stuff in it.

Taquitos: http://en.wikipedia.org/wiki/Taquito I bake mine instead of frying.
I buy bison at Walmart. Also, Ask your local market if they would carry it for you. Mine started carrying turkey breast cutlets because I asked. :-)
I also buy chicken that are individually wrapped. Like 4 chicken breasts in a a package...but each one is individually wrapped. When you get a big package, separate and freeze them. Then just take them out the night before you want to cook them. Easy breasy...and then you can buy in bulk and save.
Also, I have found often that specialty butchers are just as cheap as Walmart (at least in my area) and I get better, fresher cuts of meat and they will package me what I want....like only 1/4 pound of ground beef or whatever. Don't be afraid. Make friends with your butcher...you never know what you might find. Mine carries stranger things than bison like ostrich (which he says is a red meat that is also lean) and alligator. Maybe someday I'll try those too!
