Default Excited about my lunch!

Dessert-like, I suppose...but my lunch today

1 Carnival Squash - halved and seeded
2 fuji apples, chopped
1 oz raisins
1 oz chopped pecans
cinnamon
sugar free maple syrup
a dash of salt

2 servings - apples, etc mixed and used as filling in the squash halves - roasting in the oven right now... smells soooo good

I do not know what I would do without roasted squash of all types. Your lunch sounds amazing, and similar to some recipes I have tried in the past. Have you ever considered adding a touch of basalmic vinegar? Ads a bit of tang and can really brighten up the dish, even if the overall flavors are mostly sweet.

that sounds like a great addition...I think I'll add it when I heat up the second half for lunch tomorrow
