Default Looking for Healthy Fried Green Tomato Recipe

So it's that time of year, all the tomatoes on the vines are getting ready to ripen (we had a late planting season here!). I usually make fried green tomatoes before they all get ripe, but this year I don't think that frying anything in 1/2 inch of oil is a good idea for my new eating plan. lol Anyone have any healthy fried green tomato recipes?

Hm. I've never had a fried green tomato, but I do like to cook...

There are tons of recipes for healthier baked versions of fried chicken. Could you modify one of those recipes? Or maybe closer would be a baked version of eggplant parmesean?

I always use Louisiana Seasoned Fish Fry for fried green tomatoes. It only has 20 calories, 5 grams of carbs, 0 fat and 135 mg of sodium per serving (2 tsp). I bet you could use that to coat them with before baking them. Maybe just use water or skim milk to wet them first (not sure how well that would stick).

When my daughter was pregnant with her first baby she craved fried green tomatoes and green tomatoes were not easy to come by at the time. She was so sick and didn't eat much that I pretty much tried to indulge her every craving (she lived with me while her husband was gone to bootcamp). I ended up buying tomatillos from the grocery store and frying those for her - they don't taste exactly the same, but they are darn close.
