Have been craving these. We serve something like this at our restaurant, topped
with a whole grilled shrimp.
5 jalapenos, sliced lengthwise, seeds and membranes removed
2 wedges Laughing Cow Lite or 4 T. lite cream cheese
2 T. lite sour cream
8 slices turkey pepperoni, chopped
1 green onion, chopped
1/4 c. grated RF cheddar
8 medium cooked shrimp, diced
With a fork, blend the cheeses, sour cream, pepperoni, and green onion. Stir in the shrimp. Stuff the jalapeno halves with the mixture. Broil until hot and bubbly. Yum!
