For once someone brought healthy food to the office
I have some fresh mint and thyme to take home! I think I will use the mint in a greek salad - cucumber, avocado and light feta. Or to flavor water. Not sure what I will do with the thyme. Does anyone have any good recipes?
I marinate chicken in a mixture of thyme, a sprig of rosemary, lots of lemon juice, salt, pepper, and a bit of olive oil. Marinate 8 hours, then grill. SO GOOD.
