Lightbulb Any idea on points for this recipe???

I was reading something on Hungry Girl about using Laughing Cow cheese wedges and did a search and this recipe popped up:

Put cheese in a bowl and add some chopped broccoli that's room temp and season to taste. Spread it on boneless skinless chicken breasts that have been flattened. Roll up to resemble chicken cordon blu. Bake...YUMMMMM!

Can anyone give me an idea of possible points here? I had never heard of this cheese but this "mini" recipe has me intrigued....ok and hungry!!

Each wedge of cheese is 1 point. They are very good!
Chicken is 1 point per ounce - so for a 4oz piece of chicken the whole recipe is only 5 points

Oh Thank you! I thought it sounded so good, I decided to buy the ingredients and total them up.

I bought:

4oz. chicken breasts
Original Laughing Cow Cheese wedges (creamy swiss)

And decided to add:

Fresh spinach
Canadian Bacon slices (1 pt each)

The way I figured it:

Chicken Breasts - Boneless/skinless = 4 pts
Spinach = 0 pts
1 wedge LB cheese = 1 pts
1 slice lean Canadian bacon = 1 pts
Extra lite bread crumb coating = 0 pts.
TOTAL POINTS = 6-8*
*depending on type of coating

Can't wait to get this going in the oven tonight!

Make sure you buy the LIGHT Laughing Cow Cheese Original. They have a regular version that is slightly higher in fat and calories. The light version is a green container and the regular is blue.

Shoot...Walmart only had the blue container But I just went downstairs and checked the calories/fat/fiber with my WW calculator and it still comes up 1 point per wedge

It turned out WONDERFUL! My husband couldn't believe it was lower in calories!

I did add an additional 1 point by adding one more slice of Canadian bacon. And I do think the chicken breasts were a little bigger than 4 oz. Since I had 11 points left for dinner, I am still ok. But next time I will stick to one slice of bacon and use a smaller chicken breast.

After eating I figured it probably came in at around 8-9 points because of the larger piece of chicken and the extra slice of bacon, but it was wonderful.

And I know that if I want a lesser point recipe, I can use a smaller breast and only one slice of bacon.

BTW: I have never had laughing cow cheese and now I am a convert I stuck with only one wedge per chicken breast & I was worried that there wasn't enough cheese on the breast (I spread it with a butter knife over the top of the breast) but there was more than enough! After the cheese I added the two slices of Can. Bacon and then piled on the fresh spinach. It was wonderful!!!!!!!

Our 11 y/o son (who loves chicken...but plain) took a bite and declared that he would eat this every night !!

Guess we have a new favorite!

Glad it turned out well! I may have to steal this recipe.

You'll be amazed at the uses you'll find for the cheese. I spread it on crackers, apple slices or use it as a sandwich topping instead of mayo. It's great in recipes for adding creaminess (go to hungry girl's website for lots of recipe ideas).

Steal away, LOL!!! This was so good, I was thinking this morning, "Gee would anyone mind me making that again tonight, LOL?"

But hey...I have a 10lb. bag of chicken breasts from CostCo, so I will be making this again soon.

BTW: I had just found HG and her website the other day. What a find! How are her books? I'm thinking good as my library shows them all checked out for now.
