Not so French-but they are fries
Someone once told me that I can make low carb fries, but that didn't make any since, because fries are made from potatoes right?
Wrong!
Well...not these
"Not so French Tempura Fries"
3 or 4-Daikon Radishes (If you can't find this in your local grocery try an Asian market)
1/2 cup-Panko bread crumbs (If you can't find this in your local grocery try an Asian market)
1/2 cup-Almond flour/meal (you can get this reasonably priced at Trader Joes with the skins)
1/2 to 1 tsp- Sea salt
1/2 cap- vinegar
1/4 to 1/2 tsp- Cajun seasoning (optional, but gives you good Cajun Fries!)
1 Egg
3/4 cup-Ice water
Olive Oil or Canola Oil for frying
Method:
Wash, peel and cut the Radishes into "french fry" shapes (whatever size you like).
Soak Slices in water and vinegar for 15 minutes, then drain well and dry. Sprinkle slices with seasonings.
Put panko bread crumbs in a bowl
Preheat oil for frying
Tempura batter:
beat egg in a seperate bowl, add ice water (make sure it's very cold) and almond flour/meal.
and dip slices in tempura batter with one hand and sprinkle each with panko using the other
Make sure oil is hot (350 degrees) Put slices into heated oil and fry until crisp.
Great French Fry alternative! You can also leave the tempura out and use the almond flour/meal to batter your fries. Please let me know if you like this recipe!
