Wheat free Lasagne Ingredients Mince Tomatoes Herbs - Parsley, basil, Oregano Garlic onions Zucchini/Courgette sliced or peeled thin Milk Cheese - I use Edam - Grated corn flour Cook the onions till clear - can be done either in a fry pan dry or with wine or a nice low sodium Stock (vegetable works ok) - add garlic and then mince - brown mince add tomatoes chopped ( I leave the skin on some people remove it) cook down to a nice thick tomato mince sauce add other spices for flavour if you like - paprika can add a little kick Make a Cheese sauce using the milk and cornflour start with a cup of milk and whisk in about 1/4 cup cornflour, heat and stir with the whisk until it starts to thicken and grated cheese and stir, I probably add about a 1/2 cup of cheese here to this amount cook till thick - does not matter if its lumpy for this that is fine, key point here is thick depending on how much mince you have and how many Zucchini/Courgettes you have you may need more sauce place mince mixture in bottom of large dish spread a thin layer of the cheese sauce on it then layer the Zucchini/Courgette over that then repeat with another layer of cheese sauce, then Zucchini/Courgette I like to finish this layer with another thin layer of cheese sauce then repeat from the mince layer, this dish usually makes about 6 serves if using around 500grams of mince - I find with 1kg I only get about 10 serves but that could be because the family really like this dish Serve with a salad made of your favourite Veggies |
Pineapple Angel Food Cake
Got this off of Pinterest...and just made it...Yummers!
1 box of Angel Food Cake 1 (20oz) can of crushed pineapple Mix the two together with mixer, it should be foamy....then put in a sprayed 9x13 pan or so...and cook in the oven at 350 for 30 minutes. Excellent. |

Greek Yogurt Pancakes.
I used plain, 2%, found some with minimal grams of sugar. The tartness of the greek yogurt comes thru a bit, but it does fluff up a bit and gives the overall taste and texture of pancakes. I used a sugar free maple syrup and ate it with one sunny side egg on top. I made them a bit bigger than a silver dollar and they were the perfect size. I found the recipe on the food network. Enjoy! YIELD 12 - 4 inch pancakes 8 ounces Greek yogurt 7 tablespoons all-purpose flour 1 tablespoon sweetener (I left it out and they were still yummy). 1 teaspoon baking powder 1⁄2 teaspoon salt 2 large eggs 1⁄2 teaspoon vanilla extract |

Grilled Calamari recipe
Preheat a grill.
Toss the squid bodies with the oil, and generously season with salt and lots of black pepper. When the grill is very hot, add the squid and grill for about 5 minutes, until lightly charred all over. Combine the lime juice, fish sauce, sugar, and chili sauce in a mixing bowl and whisk to blend. Slice the grilled squid into 1⁄2" rings. In a salad bowl, toss the squid, watercress, cucumber, tomato, onion, and peanuts with the dressing. Divide the salad among 4 plates. |
