Mmmmm so many yummy meals have been posted and yes all are welcome!

Last night I had oven roasted cauliflower with some parmesan and oven roasted curry shrimp. It was yummy.

Not sure about tonight but will post later.

Trying something new.

Thai Curry Recipe
Ingredients:
1 tablespoon red curry paste this is less than original recipe called for use 1 tsp to start
any kind of meat or seafood
1 tablespoon coconut oil
minced garlic and ginger if desired
fish sauce or tamari soy sauce
1 can coconut milk

green onions plus lots of other veggies. Anything you have on hand. We like carrots, peas, bok choy, cauliflower, red peppers....

Method:
1.Heat up a pot with cooking oil.
2.Saute the red curry paste until aromatic with the garlic and ginger then add tamari soy sauce
3.Add stir fry veggies and meat then cover with coconut milk to finish cooking.
4.If using shrimp add at the end
**I added cashews to give it a nutty flavor.

I'm cooking my girlfriend beef stroganoff for dinner tonight. I'm going to try to send home as much as possible with her, but I'll probably be eating small portions of it for a few nights with tons of veggies to make it filling. She loves pasta and I'm trying to limit my consumption of it... bah.

After that it'll be the usual chicken breast & green beans. I've been eating saurkraut as a second side for this past week- I forgot how good and low calorie that stuff is. Yum.

Tonight its shredded BBQ chicken.
2lbs bonless chicken breast
1 cup BBQ Sauce (the one I used was 45 cal/per serving)
1 cup diet coke
2 teaspoon seasoning salt
Crockpot 6-8 hours, (shred chicken 1 hour before serving so the sauce soaks in)

and some kind of veg. (probably broccoli)

I finally made myself cook something substantial...

Quinoa ,Kale, Random frozen veggie Caserole topped with a thin layer of sweetpotatoe (trying to reduce fat contents so avoided the urge to add CHEESE ) .

For a badly planned /disorganized cooking job it actually turned out pretty well. I tend to have luck in the kitchen or maybe I'm just... not that picky.

If you haven't tried it yet, the cauliflower alfredo is an awesome healthier version.

Another option is to put your pasta into a pan when it's al dente, add some nefuchatel (light cream cheese), milk, salt and pepper, and parmesan cheese. It's a quick version.
