RoxieK - have you tried coconut flour? Muffins made with that are safe to send to a nut-free school, since coconut isn't actually a nut
My husband and I eat paleo/primal which is by nature gluten-free (husband HAS to eat gluten free, as he has a pretty severe gluten intolerance). I eat low carb, husband eats moderate carb (plenty of sweet potatoes, fruit, etc.) as he absolutely does NOT need to lose any weight and has no metabolic issues. I
