Default Low Carb/Gluten Free?

I'd love to hear from others that are doing this. My husband has been on it for a year and I am just joining him. I've been on it for a couple weeks and i'm looking to find recipes others have tried and like that have made this journey easier. I'd also love to hear how everyone has been doing with this lifestyle. It's not as bad as I thought and i'm really enjoying trying lots of different/new things.

I have been following the wheat belly book for a few months now and have lost about 18 pounds. Not eating wheat essentially makes it carb free which has been the reason for the weight loss. There is a forum under low carb for wheat belly which may give you some ideas. There is also a website that someone here mentioned gourmetgirlcooks.com which has great gluten free recipes. I agree that it's not as hard as I thought and I find I don't need to eat as much as before. Just dont get caught up in buying all the gluten free breads, muffins etc as it won't help with weightloss. Good luck!

Hey Sparkygrrl,

I haven't bought any of those low carb breads. I have tried making a couple which are alright but even then we don't eat them all that often. I will have to check out that website and the other forum here. 18 is awesome..wtg! :-)

Thanks. I know the baking without regular flour doesn't taste the greatest so I find it easy to stay away from. You should read the wheat belly book. It is really amazing and most libraries have it. The author has a new cookbook out also which I'm looking forward to buying at some point. Take care!

I'm actually not really missing baking with flour. I have found so many recipes with alternatives in them like almond flour. Only hard part about that is most things I bake bread, muffins, ect I can't send to school with my little one.

I have the Wheat Belly book I have just started reading it. :-) Does he have 2 cook books? When is the new one coming out?

We're doing low carb for weight loss and gluten free for my bfs health issues. Fast paleo is a great site for recipes.

Hi roxie,

He has the original book that has a few recipes in it and then his cookbook just came out in December. I have recipes using coconut flour which you could send to school. I find my kids do not like the baking I do with the healthier flours and my daughter specifically asks for those cheap per made muffin mixes. I find I am always making two separate meals which is frustrating but still worth it in the end

Er, no. That's not true. There are carbs in all vegetables and fruit as well as rice and dairy foods and other things, not just wheat.

RoxieK - have you tried coconut flour? Muffins made with that are safe to send to a nut-free school, since coconut isn't actually a nut

My husband and I eat paleo/primal which is by nature gluten-free (husband HAS to eat gluten free, as he has a pretty severe gluten intolerance). I eat low carb, husband eats moderate carb (plenty of sweet potatoes, fruit, etc.) as he absolutely does NOT need to lose any weight and has no metabolic issues. I love it, and I'm basically never hungry when on plan - not to mention I have tons more energy!

I am going to try out a couple coconut muffin recipes tomorrow and see how she likes them.
