Meal Prep Problems.
 
If I prep my meals for the work week I am a champion at staying on course. The weeks that I fail to prep are weeks where I start sneaking in extra calories and pushing the limit on my Calories In - Calories Out window.

The problem with prepping my meals is eating them day 4 and day 5. Anyone else notice that on day 4 and 5 the chicken is a little too dry, the pasta is getting hard, the yams are 'wet', and the broccoli is dry? I mean, these are just examples but my point is that my food just isn't as appetizing the longer it sits in the fridge.

Sometimes I troll through Pinterest and look at meal prep photos. It all looks so good and perfectly organized. lies, lies, its all lies :dizzy:

Sometimes I freeze my day 4 and 5 meals but I don't have a work environment that makes thaw or heating an easy job.

anyone else notice this pattern in their weeks? What kind of food are you guys prepping for the week?

This is how I meal prep.

Without a microwave I'd probably purchase a wide mouthed thermos (my daughter has one) to pack hot food. Just warm up a freezer meal before leaving for work in the morning, then pack it in the thermos.

There's salad mason jars, and I find that things in casserole or one pot form (soup, stew, chili, stuffed vegetables) tend to hold up better than just individual components on a plate.

I food prep two days a week, because of that reason and my husband had eaten half of it by the middle of the week ...
But I also dont work mon to fri.
On mondays (which is my Sunday).
I hardboil about 20 Eggs
These go in salads or in egg salad with cucumbers as my "bread or chip"
I chop up: 6 bell pepper, 3 cucumbers, onions.
I spaghetti-ize 3 zuchini. The left over remnants are chopped up for egg scrambles.

I also bake a pan of boneless chicken thighs or breasts.

Between all that I'm able to make:
Chicken with alfredo/pasta sauce, mushrooms and zuchini noodles
Egg salad or tuna fish "sandwiches" on cucumber.
Veggies with hummus
A salad (Just throw a bunch of veggies together with dressing)
I do alternate with turkey and cheese roll ups or make shephards pie with cauliflour. But the previous are almost always my staples because its a quick food prep and i like all of them.

I don't meal prep, but I want to. These are great tips. Munchy, your meal prep document is amazing! I have recently discovered eatingwell.com and I love it so far.

Aww, thanks! I wrote it out for friends/coworkers because they were always asking me how I do it. A little bit of prep goes a LONG way.
