Question Canning Anyone??

Do any of you do any canning? I have a box of jars that I bought at Wal Mart, probably a year ago, that I intended to use to make jelly or something, and never did.

Now that it's fall, I'm thinking, my in-laws have those two apple trees they're gonna want all plucked soon. I could make applesauce and can it, or can the apples for pie. Then I got thinking, I really want to get a pumpkin and make pies again this year, but what if I could get a few, cook them down and can them, instead of just freezing them? And then there's always the prospect of baby food down the road too!! DH makes the best spaghetti sauce, I'd love to can that and give it to relatives for Christmas gifts, as well as stock up my pantry...and save freezer space.

Do I sound nuts? Do any of you have experience with this? I've read a few things that say you have to be careful with things like spaghetti sauce.
