Birthday cake
 
My birthday is on Sunday. I want cake in a bad way. Do you know of a cake recipe that is on the healthy side?

Do you have a boyfriend or a husband? Maybe even a good friend can help.

So my birthday was in August and I am a sweets fanatic. All I wanted was cake and we were spending it with family so I knew there would be cake. I took the smallest piece of cake and I took a scoop of vanilla frozen yogurt and my husband split it with me. He of course went back for more but I got to taste what I really wanted and I didn't go over board. By planning that... I knew what I could have and it wasn't me with a cake pan and a fork... lol.

Oh and the little weight watchers cakes are good too if you just need something to take that edge off.

If you are celebrating with just your immediate family, you could get one of the small cakes or cake pieces that they sell at grocery store bakeries...that way you contain the fall-out to an acceptable level while still allowing yourself a small indulgence for your birthday.

Does it have to be a cake? You could do cupcakes? There are 12 pcs in a cake per recipe, but 24 cupcakes per a recipe. You could just eat half a slice of cake, but when I eat a whole cupcake, I don't feel deprived! And no one will say "gee, why such a small piece of cake" or anything like that!

This is the birthday cake my mom used to make every year for me, that my grandma made for my mom every year growing up. I've altered it to make it even more calorie-friendly!
It makes 12 slices.. But even a 1/12 is still a pretty big piece.

Raspberry Angel Food Cake

STEP ONE:
Make the Angel Food Cake (I usually just buy the cake mix - Just add water!!)

Ingredients
* 1 cup cake flour
* 1 1/2 cups white sugar
* 12 egg whites
* 1 1/2 teaspoons vanilla extract
* 1 1/2 teaspoons cream of tartar
* 1/2 teaspoon salt
Directions
1. Preheat the oven to 375 degrees F (190 degrees C). Be sure that your 10 inch tube pan is clean and dry. Any amount of oil or residue could deflate the egg whites. Sift together the flour, and 3/4 cup of the sugar, set aside.
2. In a large bowl, whip the egg whites along with the vanilla, cream of tartar and salt, to medium stiff peaks. Gradually add the remaining sugar while continuing to whip to stiff peaks. When the egg white mixture has reached its maximum volume, fold in the sifted ingredients gradually, one third at a time. Do not overmix. Put the batter into the tube pan.
3. Bake for 40 to 45 minutes in the preheated oven, until the cake springs back when touched. Balance the tube pan upside down on the top of a bottle, to prevent decompression while cooling. When cool, run a knife around the edge of the pan and invert onto a plate.

STEP 2:
Raspeberry Jello Filling

Ingredients
* 3 packages of No sugar added raspberry Jell-o
* 2-3 cups frozen raspberries

Directions
1. Make Jello-o according to package and add frozen raspberries. Refrigerate until set.

STEP 3:
Put it all together!

1. Cut
cake in half horizontally.
2. Fill hole in bottom half with raspberry jell-o filling. Cover top of bottom half with filling. Place other half of the cake back on top, fill the hole with leftover filling.
Optional:
3. Cover cake with 95% fat free Cool-Whip

Makes 12 servings

Per serving:

Angel food cake: (according to Duncan Hines cake mix)
Calories 140, Fat 0g

Jell-o:
Calories 10, Fat 0g

Raspberries:
Calories 16, Fat 0g (maybe 0.2 g lol)

Optional Cool-Whip (per 3 tablespoons)
Calories 25, Fat 0.5g

i agree with the angel food avenue. i usually make it into a strawberry shortcake.. cut/mush berries with your favorite sugar alternative (or none at all). layer on cake slice. also, the option of fat free cool whip or something of that nature if you're into it.

Have some cake! Count the calories, control the portion, exercise to make it up. This is why I LOVE calorie counting versus many other diet plans. You CAN have whatever you want. Just stay within your limits!

I agree with just having some cake! :) Of course cup cakes are good and just about the same and very controllable in that way.

Make a Diet Coke Cake! Just one box of any brand chocolate cake and 1 can of Diet Coke...nothing else...combine cake mix & soda until smooth then follow baking instructions on box...even makes cupcakes...if you like white cake, then use a Diet Sprite (i've never tried this but hear it's the same)...then you can indulge & use regular icing, or make an icing out of SF-FF pudding mixed with Cool Whip Free....or you can sprinkle some powdered sugar on it

i've made the choc. diet coke cake for a work event and NO ONE knew it was diet! lol To figure up cal/serving, just follow the nutritional info on the box for Mix Only (should be included)...this cake is SUPER moist! I like it w/out icing!
