I've never cooked one myself, but I think they're pretty similar to acorn squash in terms of texture and sweetness. I've used (microwaved, mashed) acorn squash in this dish and liked it:

I was planning to buy a fairly sweet and small squash this week to roast - just chop it into chunks, toss it in some oil, and throw it in the oven at 400 F. (You can add your favorite herbs/spices, salt, and/or onions for something more savory... or cinnamon and maple syrup or honey or whatever for something sweet.)
