Default Cream of Zucchini Soup

From French Taste by Laura Calder

Vache Qui Rit Soup (Zucchini Soup)
(vache qui rit) is laughing cow in French.

1 onion thinly sliced
2 lbs of Zucchini, chopped
2 cups chicken stock (I used 6)
salt and pepper
pinch of cumin
3 or 4 triangles of low fat laughing cow
1 19 oz can of white beans*(well rinsed)
fresh herbs such as mint, chevril, or dill(optional)

put the onions and zucchini and well rinsed white beans in in a pot and pour over the stock. Season with salt, pepper and cumin. Simmer for about 15 minutes or until zucchini are soft. Add the cheese and herbs and puree.

*white beans is my addition as per another soup that I was making and cottage suggested adding white beans. Since then I have been adding white beans to alot of my soups.

Another way to use up zucchini! Thanks, Sophie, this does sound pretty good and I'm looking forward to trying it.
