Default What to do with green beans?

Could somebody suggest what to do with green beans, please? These are among the few veggies that I "don't do" because I don't know how to prepare them (to be tasty). I loved green beans from a Chinese resto but they were quite spicy and must have been made together with bacon because the flavour was very bacon-ey.
I would like to make green beans as a side dish to e.g. fish & sweet potato or chicken & sweet potato.

I love green beans. I can eat 'em warm or cold....straight out of a can, if a can is what I've got!!!

There's a recipe I've heard was good, though, and want to try.

You melt 1/4 cup of butter in a skillet and mix in 1/4 cup Italian salad dressing (fat free/light for me), then add the beans, cover them and let 'em simmer for 20-25 minutes, or 'til they're as done as you want them.

Sounds good to me...

I can't post a link because I don't have the required # of posts yet, but...

On FoodNetwork's website, you can search for "Orange Scented Green Beans." It's my favorite green beans recipe....it's from Rachael Ray. They are very fresh and light, and the chives at the end really make the dish. I made them for Thanksgiving last year and everyone raved! The big burly men at the table actually said the green beans were their favorite part of the meal!

You can roast these guys too with some salt and garlic powder. Kinda like semi crunchy chips. Great snack

Thanks, dear chicks! I will try all recipes, the first one I want to try is the one with sesame oil - it sounds like it could be what I used to have from the Chinese place. I am buying green beans today - woohoo!! - thanks for the suggestions.

OH I Love fresh green beans! They are GREAT on the grill, just brush them lightly with some olive oil and put those babies on a grill and blacken them a bit, sprinkle with sea salt, they are similar to french fries!

Also, I found a recipe that I've adopted as well. Take fresh green beans, brush them with olive oil, cut up some garlic and toss them onto a baking dish, broil them until they are soft and ready to eat...then chop up some fresh basil and grape tomatoes (halved), toss it in and broil a lil longer, just til the tomatoes are warm, take it out and serve. SOO Good!

*Edit* I found the recipe!

3 spray(s) olive oil cooking spray
4 cup(s) green snap beans, trimmed
2 cup(s) grape tomatoes, or cherry tomatoes, cut in half (or quartered, if large)
1/4 cup(s) basil, fresh, cut into ribbons, divided
2 tsp minced garlic, or less to taste
1/2 tsp table salt, or more to taste
1/4 tsp black pepper, freshly ground, or more to taste

Preheat oven to 450ºF. Coat a large roasting pan with cooking spray.


Place green beans in a single layer in prepared pan and coat with cooking spray. Roast until desired doneness, stirring once or twice, about 10 to 15 minutes.


Meanwhile, in a medium bowl, combine tomatoes, 2 tablespoons of basil, garlic, salt and pepper; set aside.


When green beans are finished, remove from oven and spoon tomato mixture into pan; toss thoroughly. Serve hot, room temperature or chilled, topped with remaining 2 tablespoons of basil. Yields about 1 cup per serving.

I am eating them this week because they are on sale. LOL. I snapped the ends off. I sauteed a ton of garlic pods and a ham steak in my pot and then filled with water and beans. I boiled them for 30 minutes. Voila.

If you like them firmer, you can steam them and drizzle a little butter or olive oil and a pinch of salt. If you like them soft, cook them in a pot or crock pot in chicken broth. Personally, they're one of the few vegetables I like canned.
