For a while, I seemed to see this mentioned all around. In the supermarket last week I impulse-bought some. Now I don't seem to see it mentioned anywhere! So, what do I do with it, please?

I have put it on yoghurt with fruit and used it in smoothies. I also have been known to throw some in my egg white mixture I make up to make omelettes.
I have mine every morning in a smoothie made with Almond breeze, 1/2 banana, strawberries or whatever fresh berries I have around. If I'm in a rush or just want to get it in I will chug it in a little OJ or cranberry juice.
I mix mine with equal parts wheat germ and use the mixture on a lot of things. The last time I used it was on my oatmeal the other day, along with some slivered almonds and fruit. I use it in pretty much anything I bake, and I stir it into my yogurt as well.
I add it to yogurt (like everyone, I see) and the wheat flour pizza crust I tend to make for Friday nights. I put it in homemade multigrain bread, too. Next time I make waffles I am planning to put it in those.

Is that a half or a third of a CUP?? That is a heck of a lot of flax seed, I hope you drink a LOT of water after that muffin. I need to drink a LOT of water when I eat 1 or 2 tablespoons of flax seed regularly.

For 1 largish crust in my (2lb) bread machine:
3/4 cup water
3/4 tbsp olive oil
1.5 cups flour + 1/8 cup flour (I use wheat AND white flour, but tomorrow night I was thinking of using all wheat with some vital wheat gluten)
3/4 tbsp sugar (can use less)
3/4 tsp salt (important to be exact with salt)
3/4 tsp active dry yeast or 1 tsp rapid yeast (I usually use a little extra)
2 tbsp+ ground flaxseed (whatever you'd like -- haven't discovered the limit yet in comparison with wet ingredients)
1 tbsp assorted spices (Basil and/or Italian seasoning, or even crushed red pepper which gives the whole dough a nice reddish tint, too)
Machine does my hard kneading work; I just roll it out, let it rise for about 15-20 mins and then add tomato sauce, veggies & skim mozzerella before baking.
I feel good that I know what's in it and that it's not extra oil; guess that's the biggie for me.

Sweetner to taste ( I like using 1 TBSP of SF Davinci Syrup or liquid splenda)
Mix in 1/4 cup of flaxseed meal (and/or mix with almond meal, protein powder)
1/4 tsp of baking powder
Microwave on high for 1 minute*
Turn out and let cool
The muffin may look kind of wet at first, but it dries quickly as it cools.
Eat warm with butter or wrap cooled muffin in plastic to eat later.

Hmm, interesting recipe, I justmay try that, but a 1/4c is still a lot of flax in one sitting...
