She doesn't charge anything and loves to cook and gives her recipes away. I would love to see her publish a cookbook for bariatric patients. Her Italian bean salad is really good. She has tons of recipes for protein ice creams and all different kinds of the bites. Different kind of meatloaves and lots and lots of ww tortilla-type pizzas and casseroles. I love her roasted eggplant dip, ricotta pancakes. I think she lives in Californi and visits the farmer markets a lot. Her Ricotta bake is good and her noodle-less lasagna is one of my favorites. Really it was through her that I realized that I could eat food, real food, just tweak it a bit. She has a nice wls story also.
Now that tuna and egg thing......Yep gonna make it for supper. I learned this week that you can cook a whole bunch of eggs in your pressure cooker for hard boiled and it is so easy.
Dumping on bacon, oh man, I would probably be dead if I couldn't eat regular bacon. I hate the turkey bacon, BLAH!!, but love turkey sausage.
So what is everyone doing for Easter food. I'm not doing a traditional ham or lamb thing because I get stuck with leftovers that take me weeks to eat. I'm still working on ham that we had for Christmas. It is vaccum-packed and still good, but.........too much of a good thing.
We are having:
Smoked hamburgers and turkey brats
Fresh fruit
Veggies with homemade hummus
Baked potato casserole
SF Pistachio Pudding, Pineapple, Cottage cheese salad
Crescents and little sausages
Shrimp with homemade cocktail sauce
and what ever the kids decide to bring
Sure is a far cry from the ham, scalloped potatoes, gravy, corn, homemade rolls, cakes, pies, cookies that we used to have. Lot less work also. I'm getting a smoker this week and will be doing some turkey and ribs and that danged little Yorkie if he doesn't quit biting my ear when I'm on the computer!
Since there are so many low-carbers in our family, I'm really trying to not to make too many carby things, but have to feed those who just live without the carbs! I'll have all of my grandkids home at once time and I'm so excited about it!
Hope you all have a nice Easter and stay away from the candy. I still can't find the peanut M&Ms that my DH hid. TYG!!! I had a dark chocolate Hershey kiss yesterday that I found in the bottom of the freezer! I was surprised at how sweet it was and haven't missed them one bit. LOL!
