Default What Did You Have for Dinner Last Night?

Howdy! SO, Here, we can start to post what we had for dinner. I thought it'd be a good way to get some good OP recipes, and even be a place to be accountable for staying OP eating wise! I know we have some REALLY good cooks and some that need extra help, so hope this helps! Hopefully this isn't a repeat!!

I had a ham sandwich with pepperjack cheese, bell peppers & onion. It was so good and only 414 calories.

I cut out the butter completely, used a 16 oz of Whole Wheat spirals (Slightly Overcooked) and added some shrimp that was sauteed in garlic and white wine!

Hopefully this one will stay more alive than the one I have done in the past haha.

I grilled chicken breast with grilled yellow squash, zuchhini, red onions, and bell peppers with a wheat roll.

Man, last night was NOT a good dinner for me. I had chicken tacos. enough said. And a piece of cake. Because it was the first time I've ever baked a cake on my own.

Usually I'll have chicken salad and a little chicken rice or home made mashed potatoes. Im thinking of cutting those out though.

I had a roast beef wrap on low carb tortilla, 2oz roast beef (Deli Select), baby spinach, 1 slice fat free cheese, garlic powder, crushed red pepper and onion powder.

That was my quick dinner cuz I was at the restaurant but I made stuffed bell peppers this week with that smart pasta stuff! Yummy!

I had marinated chicken breast (mrs dash southwestern) with sauteed veggies and a baked potatoe with 2 laughing cow light cheese wedges and spices. Very good!

I made Deer Chili, FULL of fresh veggies (Tomatoes, bell pepper, onion, garlic and carrots) and some brown rice. Tonight, it's brown rice chicken and turkey sausage jambalaya with asparagus on the side!

Yesterday: Roasted asparagus, grilled pineapple-marinated chicken skewers, and homemade butternut squash soup.

Today - Spicy Garlic Shrimp Stirfry - shrimp, broccoli, cabbage, bell pepper, carrot, a ginger-soy-chili sauce, served over brown and wild rice

last night - a salad with chicken and a scoop of tuna fish salad

tonight - roasted chicken (they always have a special at the store on thursdays) and a large salad

Last night I diced a chicken breast and cooked it in a tomato and vegetable sauce (just garlic, onion, carrot, mushroom, with some peeled canned tomatoes bashed up and a load of basil chucked in). I then mixed some bulghur wheat into it to absorb all of the lovely juices, and served it with some savoy cabbage tossed with a bit of butter on the side. It was 490 calories in total, and it was very filling and tasty. Bulghur wheat is fantastic - it has a really nice flavour, it's low calorie, high in fibre and a great alternative to rice, cous cous or pasta.

Tonight I had a fish finger sandwich for dinner! I really felt like treating myself to some childish comfort food, and it really hit the spot. Lightly toasted ciabatta, thin spread of butter, bit of tomato ketchup, some fresh lettuce and fish fingers. It was 540 calories, perhaps not the most balanced of meals (no veggies!), but not bad at all.

Tomorrow evening, I plan on making this: spaghetti with sardines, walnut and garlic.

Since I had class I had a footlong subway club, wheat bread, light mayo and mustard, all the veggies, no salt, no pepper, no oil, no vinegar.
