I made these for breakfast this morning.
I could only manage to eat 1½ because they're so filling. Hubby ate the rest, but even he was conceding defeat after his third! I wouldn't have these every day, but they made a really nice treat.
Almond Pancakes
Ingredients (makes 5):
- 1 cup almond flour
- 1 scoop (16 g) whey protein isolate (unflavoured)*
- ¼ t salt
- 1 t baking powder
- 1 t Splenda or 2-3 drops liquid stevia
- 2 large eggs
- ¼ cup water
- 1-2 T oil
Method:
Mix all ingredients thoroughly. Drop ¼ cup measures onto a non-stick griddle or frying pan, and cook as for regular pancakes.

Using only one tablespoon of oil will knock the fat and kcals down to 16 g and 203 respectively.
*My whey protein isolate contains only ½ g carb, 1 g fat, and 65 kcals in a small scoop.
