Default What are your saviour foods?

This Lent I'm eating no yeast, no sugar, no meat, no dairy. I'm having fun experimenting to find meals that are tasty and nutritious within those parameters. Some meals are still kind of 'interesting', though.

My big saviour was finding a recipe for basic flat bread.

2 oz flour - been using up some plain flour, now about to try some gram flour
a little salt
a lot of freshly ground black pepper
1 tsp olive oil
water to make a very stiff dough.

roll out very thin.
heat a frying pan/skillet very, very hot. no fat.
slap dough on, cook for about 45 seconds, turn over.

great along side chunky soups or veg. curries.

each bread is about 300 cals but if eaten with lo cal veggie stews, soups etc that's ok. if I'm calorie-pressed, I make a half-sized one, just roll it thinner.

It feels a real treat, and is definitely saving me from feeling hard done by.

roasted veggies of any kind with some fresh ground pepper, garlic and olive oil. Num!!!

Large salads with TONS of veggies and nuts.

apples and peanut butter or almond butter.

hmmm... I'll keep thinking.

oo, the roasted veggies sound good!

update on gram flour flatbreads - somehow the same weight of flour makes a much smaller bread, and it got crispier but a great nutty taste. worked really well broken into small bits on my soup instead of croutons.
I'll become a flour expert, I'm sure. ha.

Activia yogert and strawberries with a little kashi cereal sprinkled on top. Feels like eating a sunday!

That bread sounds awesome! I put the ingredients into the WW recipe builder and using the whole wheat flour it would only be 4 points! I'm SO trying this! Thanks!!

Plain fat free yogurt with blueberries and strawberries. It makes me happy in the evening when I want something sweet. My breakfast oatmeal helps so much too, fiberlover Lori suggested stirring in some pumpkin and banana and it's sooo good and filling. I like it with diced apple and cinnamon too. Sweet potatoes are one of my go to foods. They fill you up and if you add a little low cal margarine and a tsp of brown sugar and sprinkle on some cinnamon they are really good.

Chicken breast on a huge plate of greens is a favorite for me...lean protien and nutrients of the greens.

Oatmeal (real stuff) with no sugar added peanut butter and a banana.....I call it "Hot Elvis"

Black beans, my add to when I need fiber and protien

Sweet potatoes, roasted with onions, russet potatoes, garlic olive oil.....ohh my Im getting hungry!

A good cereal now and then, helps me at night and gets me some added nutrition and iron that I need

Spinach...chopped up in your soup bowl beofre you add the soup..........chopped up on the plate under you hot scrambled eggs, brown rice, or mashed taters.........the heat from the food slighly cooks it, but not enough to kill all the nutrients......also a handful of spinach to any type of smoothie is great

I adore spinach! but I hadn't thought of putting it raw under hot foods to cook thru a little. Off to the supermarket!
