Sometimes at work i do squats and lunges. Or calf raises. Also i do the 'stomach vaccum' you can do it standing or sitting. Just suck it all in and contract your stomach muscles as tight as oyu can and for as long as you can.

On days when I'm sort of chained to my desk, I do all sorts of little things like leg lifts under the desk and, since I get to listen to music at work, I do a lot of chair dancing with abs pulled in tight.
I do resistance band workouts sitting down in my chair at my desk. SparkPeople has the video for it on their site and on Youtube and you'll need the resistance band.
I also do dips from my chair and pushups off my desk.
Also squats and standing lunges. Since I'm the only person in my office, I can also do walking lunges down the hall. But if you're in a cube, then just stationary lunging is good too.
