Default avacados... yum!

I was wondering what the restrictions were on avacados... I know they are quite high in fat, however, good fat... I usually will eat a half an avacado in a salad... is this too much? I usually will eat 1 whole one a week in 2 different sittings.... Any thoughts?

One third of an avocado counts as a fat serving. But since I am the only one in the house that eats them, and they don't keep for long, I usually eat half one day and the other half the next day, and just watch my other fats for those days.

When avocados are on sale, I usually have 1/2 of one a day. I adore them in a salad with cherry tomatoes and balsamic vinegar.

I adore guacamole. But since I can't have corn chips, I don't know what I would put guacamole on.

Melanie, put the guacamole plopped in the middle of a salad or on top of taco bake, or put some mozzarella on a few trisquits and melt in the micro, then add salsa and guacamole on top. yum. or even use it for a sandwich "dressing".

If I'm in a hurry, I just split an avocado between my husband and I and leave it in the 'shell" and then add some evoo and vinegar and some fresh pepper and salt and just put the "dressing" in the hole where the seed was and we scoop it out with a spoon at the table. Had that last night along with a shrimp stir fry. It was great.

I'll take WW tortillas, bake 'em til they're crispy, and they're like making your own tortilla chips. Cut before you bake to make less mess. Yum!
