Talking To Die For and TOTALLY Guilt Free "Fried" Zucchini!!!!

you will need:

zucchini
egg beaters
fresh parmesan cheese in a block
whole grain bread crumbs (I make my own from double fiber toasted bread)
marinara sauce of your choice
italian seasoning (add to bread crumbs to your liking)

take the zucchini, and slice each rounded side until you have a square shaped zucchini. then slice longways twice to equal 3 strips, and then cut each strip into two longways, and then each piece into half, so when you're all done you have pinky size zucchini strips.

Now, place the zucchini into the egg beaters (yes all of them) and roll them around. then roll each strip in the crumbs, and as you do each strip, place it on a baking sheet sprayed with olive oil. Bake at 400 degrees for about 15 minutes or until crispy to your liking. Regular eggs will not work - your strips will be soggy! Egg beaters are the trick.

When done, take them out, and serve them up on a serving plate with a bowl of marinara. Grate fresh cheese (about 1 tsp) all over the whole dish. For presentation, you can garnish with fresh parlsey if you like. So good - my 13 yr old son who hates veggies LOVED these!!!!

TIP: you can make chicken with this and serve "chicken parmesan", you can also do "fried cheese" using light mozz string cheese, or even sweet potatoes are so delish like this. Be creative!!!

I'm glad there's a healthy version! The last time I had not-so-healthy zucchini (it was beer battered), I felt sick afterwards. I might have to add this to my list of things to try! Thank you.
